Mushroom Crusted Tenderloin with garlic scented mushrooms



Ingredients:

  • 11/2- 2 pounds Center cut Tenderloin
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 3-4 Tablespoons Mushroom powder
  • 3 ounces Garlic scented mushroom (recipe to follow)

Method:

Mushroom powder:
Place 1 pound of dried woodland mushrooms, or mushrooms of your choice in a blender and blend until chopped into a fine powder.

Preheat oven to 375 degrees F. Season cleaned tenderloin with salt and pepper. Roll or pat with mushroom powder to form a crust on both sides. In a hot, oven-proof pan, heat oil. Place tenderloin in pan and allow to sear 20-25 seconds to form crust and caramelize mushrooms. Repeat this 2 more turns. On last turn, place in 375 degree oven and roast approximately 15 minutes- depending on desired doneness. Cook to 125degrees for medium rare and allow to rest 10 minutes before slicing to allow juices to evenly distribute. Top with garlic scented mushrooms.
