Garlic Scented Mushrooms
Ingredients:
- 2 Tablespoons Salted butter
- 2 ounces Portobello mushrooms, sliced
- 2 ounces Oyster mushrooms, sliced
- 4 ounces Button mushrooms, as small as possible. Left whole or split in half depending on size
- 1 teaspoon Garlic buds, peeled and minced
- 1 teaspoon Fresh thyme, rough chopped
- ½ teaspoon Kosher salt
- ½ teaspoon Freshly ground black pepper
- 1 Tablespoon Salted butter
- 1 teaspoon Porcini or truffle oil (optional)
- 1 teaspoon Italian flat leaf parsley, chopped
Method:
In a hot sauté pan, add butter, mushrooms, garlic, thyme, salt and pepper. Do not toss. Sear mushrooms approximately 3 minutes. Lightly toss and allow mushrooms to caramelize again, (do not over toss). Once caramelized and nearly done, add butter, oil, and parsley and toss until well combined.
